A cover is a single guest served at the restaurant; "120 covers tonight" means 120 people were served.
Cover count is the base metric for occupancy, staffing, and purchasing. Multiplied by average check it gives a revenue estimate.
Reservation data enables forward-looking cover forecasts, which improve shift and inventory planning.
