Overbooking
Overbooking means accepting slightly more reservations than capacity to offset expected no-shows and cancellations; done carelessly it risks turning guests away at the door.
The overbooking ratio should be based on historical no-show data. A venue with a 15% no-show history might book roughly 10% over capacity for dinner service.
